Gluten-Free Coconut Macaroons

Since May is Celiac Disease Awareness Month and May 31st is National Macaroon Day, let’s combine them with a gluten-free recipe! This one is very easy to make; it uses just one bowl and can be prepped in less than 15 minutes.


  • 1 package (14 oz.) coconut
  • ½ cup + 1 tablespoon granulated sugar
  • 6 tablespoons gluten-free flour
  • 4 egg whites
  • 1 ½ teaspoons vanilla

Combine coconut, sugar and flour in a bowl. Add egg whites and vanilla. Mix well.

Drop batter onto a cookie sheet that has been lined with tin foil, greased and floured.

Bake at 325 for 18 minutes or until edges are light golden brown. Remove from cookie sheet to mesh or wire rack to cool.
