Feeling Nutty? Try Our Rocky Road Fudge
June 2nd is National Rocky Road Day; most who choose to celebrate it will probably do so with a bowl of ice cream. But this concoction of chocolate, marshmallow and nuts is also delightful in cheesecake, bars, brownies, pies, candy — or, my favorite, fudge. Here’s my simple recipe for this decadent dessert.
Rocky Road Fudge
- 2 cups milk or semi-sweet chocolate chips
- 1 teaspoon butter
- 1 can 14 oz. sweetened condensed milk
- 1 ½ teaspoons vanilla
- 2 ½ cups miniature marshmallows
- 2 cups chopped walnuts
Microwave chocolate chips, butter and sweetened condensed milk in microwave-safe bowl on high for 1 minute.
Stir until chips are melted.
Add vanilla, marshmallows and nuts. Mix well.
Line 9” x 9” baking pan with aluminum foil and grease with butter.
Pour mixture into baking pan and refrigerate until ready to eat.
Dust with confectioners’ sugar, if you wish.
Lift from pan, peel away foil and cut into squares.
