Whitney Miller’s Sparkling Lemongrass Lemonade

Entertain your guests’ tastebuds with this fruity and festive fizzy beverage. Simple lemonade is transformed with the addition of lemongrass and sparkling water.
Sparkling Lemongrass Lemonade
Lemongrass simple syrup:
- 1 cup sugar
- 2 lemongrass stalks, halved lengthwise and cut into 3 pieces
- 1 cup fresh lemon juice (5 to 6 lemons)
- 2 cups sparkling water
Garnish: halved lemongrass stalks, lemon slices (optional)
For the simple syrup, combine 1 cup water, the sugar, and lemongrass in a saucepan. Bring to a simmer over medium-low heat, stirring constantly until the sugar dissolves. Reduce to low and cook for 20 minutes to infuse the lemongrass into the sugar mixture. Strain the simple syrup. Pour into a container and refrigerate until chilled.
Pour the lemon juice in a pitcher and add the simple syrup. Stir to combine. Add 2 cups water and the sparkling water. Float the lemon slices in the pitcher for extra lemon flavor. Add a lemon grass stalk.
Serve over ice and garnish the tumblers with a halved lemongrass stalk, if desired.
