Whitney Miller’s Creole Succotash Salad

As Tervis gears up for football season, we’ve asked our favorite celebrity chef to curate a menu for your game-day get-togethers. We started with a sparkling drink and a finger-friendly appetizer. Now Whitney Miller dishes out a side that can be enjoyed while entertaining inside or outside.

Serve up this crowd pleasing, budget-friendly side dish at your next game-day event. You will enjoy the versatility of this salad, which can be served cold or at room temperature.

Creole Succotash Salad

  • 12 ounces (2 cups) fresh or frozen lima beans
  • 2 ears of corn, kernels cut off the cob
  • ¼ cup chopped green onions
  • 18 grape tomatoes, halved
  • 1/3 cup pickled okra, sliced ¼-inch thick
  • 1 ½ Tablespoons chopped cilantro
  • ½ teaspoon diced fresh jalapeno

Vinaigrette:

  • 2 tablespoons fresh lemon juice
  • 1 teaspoon fresh lime juice
  • ½ teaspoon minced garlic
  • 4 tablespoons extra-virgin olive oil
  • Salt to taste
  • Cracked black pepper

Garnish: crumbled feta cheese or crispy chopped bacon (optional)

Bring a pot of water to a boil, add lima beans and season with salt. Cook until al dente and then plunge in a bowl of ice cold water to stop the cooking process. Drain.

Combine the lima beans, corn kernels, green onions, grape tomatoes, pickled okra, chopped cilantro and diced jalapeno in a bowl.

In a small bowl, combine the lemon juice, lime juice and garlic. Whisk in the olive oil until emulsified (combined and thickened). Season with the salt and pepper.

Toss the vinaigrette with the vegetables. Allow to marinade for at least 30 minutes in the refrigerator.

Serve chilled or at room temperature. Garnish with toppings, if desired.
