Summertime Blues? Try Lemon Blueberry Popsicles
With the kids back in school and Labor Day having come and gone, it might feel like fall already. Not so fast — the first day of autumn is still three weeks away, and the weather is still plenty warm here at Tervis headquarters in sunny Florida. So if you’re not quite ready to bid a fond farewell to summer, don’t have the blues — have blueberries, in a refreshing treat.
Sept. 2 is National Blueberry Popsicle Day, so let’s celebrate with this easy, healthy recipe:
Lemon Blueberry Popsicles
- 1 1/2 cups cups vanilla yogurt
- 1 cup fresh blueberries
- 1 tablespoon honey
- Zest of 1 lemon
- 1/2 teaspoon lemon extract
Combine 1 cup of yogurt and all other ingredients in a blender or food processor. To create the layered look, divide the remaining yogurt into 4-6 popsicle molds (depending on how big they are). Top that with the lemon-blueberry-yogurt mixture. Put add a popsicle stick in each and stick in the freezer until they’re solid.
Tip: Normally, I’m a big advocate of Greek yogurt. But in this case, the lemon is tangy enough, so regular yogurt tends to work better. If you do use Greek yogurt, consider using more honey.
