Good Things are Brewing in January
In addition to being a month of resolutions and new beginnings, January is known as National Hot Tea Month! There’s no better way to embark on your New Year’s resolutions than to start with a healthy, relaxing, piping-hot cup of tea made with some of your favorite foods – cranberries, oranges and lemons!
These year-round super foods are loaded with antioxidants and nutrients that provide anti-inflammatory, anti-cancer, digestive tract and cardiovascular benefits. In fact, second only to blueberries, cranberries outrank every fruit and vegetable (including red grapes, apples, strawberries, raspberries, even spinach and broccoli) with their disease-fighting antioxidants!
3 quarts water
4 cups fresh or frozen cranberries
1 ¼ cups freshly-squeezed orange juice
2 ½ tablespoons freshly-squeezed lemon juice
1 ¾ cups sugar Dash of cinnamon, if preferred
Bring water and cranberries to a boil in large, covered pot.
Lower heat and simmer 18-20 minutes until all berries have popped.
With a fine-mesh colander, strain out the cranberry skins.
Return liquid to pot, add sugar, orange and lemon juices, and stir.
When ready to serve, heat thoroughly.
If desired, sprinkle a dash of cinnamon into each cup.
