Whitney Miller’s Fresh Fruit & Coconut Snow Cones
Inspired by fruit salad and its flavors, I created these fresh fruit and coconut snow cones. My favorite fruit salad features sweet, juicy fruit and chewy flakes of coconut. Coconut takes center stage in this frozen treat with its creamy, icy coconut snow and crunchy toasted coconut flakes. Then, I top the coconut snow with my favorite seasonal fruit including blueberries, peaches and pineapple. Cool off with this refreshing treat!
Fresh Fruit & Coconut Snow Cones
1 1/3 cup canned coconut milk
1/3 cup coconut water
6 tablespoons cream of coconut
1 teaspoon lime juice
1 ripe peach, cut into ¼-inch cubes
½ cup diced fresh pineapple
½ cup fresh blueberries
¼ cup toasted coconut
Combine the coconut milk and water, cream of coconut, and lime juice in a medium bowl. Whisk until combined and smooth.
Pour into a deep pie pan or shallow baking dish. Freeze the coconut mixture for 1 hour. Using a fork, scrape the sides to break up the ice forming and bring towards the middle. Return to the freezer for another hour. Scrape the frozen coconut mixture across the frozen coconut mixture to create snow. Smooth out the mixture and then freeze for an additional hour. Scrape the frozen coconut mixture for the last time.
Divide the coconut snow among 4 Entertaining Collection’s stout tumblers.
Top the coconut snow with the fruit and toasted coconut.
