The Key (Lime) to Delicious Cupcakes
Baking can be meditative, it can help stimulate the senses, but most of all, baking helps you connect with your creative side.
Concocting new sweets is an art in itself. It takes finesse and a strong knowledge of how different ingredients complement each other to create the perfect combination. It’s more than just opening a box of cake mix.
With that in mind, nothing should stop you from earning the title of ‘Domestic Engineer,’ and we have a delicious recipe to help you attain it.
Key Lime Cupcakes
1 cup milk
½ tbsp vanilla extract
1 cup butter, softened
2 cups sugar
3 cups cake flour
1 tbsp baking powder
4 tbsp key lime zest
1/3 cup lime juice
White Chocolate Frosting
2/3 cup white chocolate
1/3 cup whipping cream
½ cup butter
1 tsp vanilla extract
3 cups powdered sugar
Preheat oven to 350°F.
Beat butter until creamy. Slowly add sugar and lime zest, continue beating until combined. Add eggs and lime juice, continue mixing.
In a separate bowl, sift flour and baking powder together.
Gradually add milk and flour to butter mixture. Continue mixing at a slow speed until all ingredients are combined and mixture is smooth.
Spoon into paper-lined cupcake pans. Fill each one until they are almost full.
Bake for about 18 minutes or until you can pull out a clean toothpick.
Allow them to cool before frosting.
Melt the chocolate first. However, floats your boat but we find the easiest way is to put it into a clear bowl and heat it over a boiling pot of water. If you decide to put it in the microwave, try to keep an eye on it because white chocolate can burn extremely quickly. We recommend microwaving it in intervals.
In a separate bowl, combine butter and sifted powdered sugar. Start mixing until combined and then beat until fluffy.
Add cream and vanilla. Then stir in melted chocolate.
Beat on medium for 4 minutes and Voila, perfect frosting every time!
