Dishing Up the Dips
Parties are one of the biggest and most fun events of a good summertime lifestyle. If you’re like me, you’ve been invited to, heard about or gone to at least one party a week so far this summer –and we’re not even half way through it! You know you’ll be going to more get-togethers and being the gracious guest you are, you’re not going to go empty-handed. Of course, you can’t bring the same thing to more than one party; it’s like wearing the same dress, just unacceptable.
By now you’re probably running out of ideas of what to bring to the next backyard barbeque. We all have our staples. Mine’s my mom’s mac and cheese, because it’s the best thing I’ve ever eaten and a well-kept family secret. But it’s summer, and who wants to spend time in a hot kitchen? I know I don’t. So here are three no-bake dip recipes that are so simple and delicious you won’t have anything to bring home but an empty dish.
4 cups of watermelon, diced
Juice from 1 lime
2-3 jalapeno peppers, diced
½ cup red onion, diced
½ cup of cilantro, chopped
1 tsp salt
Throw everything together in a bowl (except cilantro). Combine all the ingredients and then sprinkle with cilantro. Just like normal salsa, this dip is best served cold with tortilla chips.
8oz of cream cheese, softened
8oz sour cream
16oz of salsa, or you can use beans instead (refried, chili or black beans)
A packet of taco seasoning (but not if you’re using beans, unless you want more flavor)
2 cups lettuce (more or less depending on how you feel about lettuce.)
1 tomato (optional, if you do decide to use it do so liberally because the juice from can make your dip watery)
1 cup cheese, or more…okay more.
Combine cream cheese, sour cream, salsa and taco seasoning. Mix well with an electric mixer. Spread dip in a serving dish. Refrigerate it until you’re ready to serve and then top with lettuce, tomato and cheese. Serve with tortilla chips.
Cake Batter Dip
1 box of confetti cake mix
8oz of cool whip
1 cup vanilla yogurt
1 tsp vanilla extract
Combine everything except the sprinkles in a mixing bowl. Then top the dip with all the sprinkles you want. Go crazy. My favorite dip delivery devices are animal crackers — but graham crackers or pieces of waffle cones are great too.
