A Toast for Mom. French Toast, That Is.
Mother’s Day is hours away.
And you’re ready. You’re going to spend the day spoiling your mom. You got her flowers. A nice gift. A card from the heart. But …
Your mom deserves a little more. You can never do too much for the woman who gave you life. Go the extra yard, do something unexpected. Something special. Something made by hand. Something delicious.
Start the all-day spoiling first thing in the AM with breakfast in bed. That’s right. That clichéd Mother’s Day standard that has gone the way of the Dodo bird. Today, restaurants have made it easier to make reservations than to make something from scratch. For most of us, it will be our first attempt at cooking for mom while she sleeps.
Seriously, how many of us made our mom breakfast in bed? Past the age of 10? We think it’s time to return to the simpler times, when those special, loving moments made lasting impressions and turned into traditions. We like traditions. We also understand that traditions need to evolve. Case in point …
Anybody can mix up a bowl of rice krispies, some buttered toast and a glass of OJ, but only your mom’s kid can whip up a delicious banana French toast breakfast like this. She deserves it. And you are her favorite.
So … let’s get to cooking. It’s easy – with a little help from the recipe below (your secret is safe with us).
1 pinch cloves
1 pinch nutmeg
1 ¼ tsp cinnamon
1 tsp vanilla extract
¼ cup milk (can substitute with vanilla soy milk)
8 slices of bread (can substitute with Udi’s Gluten-Free Bread)
Optional for Garnish
Blend eggs, banana, milk and spices together until smooth
Preheat griddle to medium.
Coat griddle with cooking spray or butter.
Drench slices of bread in egg mixture and transfer to pan.
Sprinkle with cinnamon and flip after 2-3 minutes.
Cook both sides until done.
Put on plate and garnish with fruit and powdered sugar.
Serve to Mom in bed.
